The Garde-Manger is responsible for preparing and managing cold appetizers and entrees for Royale. Prepares a wide variety of dishes, from a number of disparate ingredient groups, including but not limited to vegetables, fruit, cheese and meat.

Job Description: 

Perform food preparation, planning, and presentation duties, for all cold items in the kitchen, including washing, chopping, dicing, and carving fruits and vegetables

Season food that will be served cold and/or hot

Prepare salads, hors d’oeuvres, cold sauces, soups, hot dishes, charcuterie, terrines, pates, and aspics

Follow any and all recipes

Ensure the proper use of scales and measurements in all recipes, portioning, and food production

Plate completed dishes, including caviar, cheese, aspics, and charcuterie platters

Assist with the preparation and planning for service

Perform pre-shift mise en place to ensure that assigned stations are prepared for service

Assist with the purchase of items for use in the kitchen, e.g. caviar, cheese, salad greens and other fruits and vegetables and meats for preparing charcuterie

Maintain product consistency by regularly conducting inspections of portions, and the appearance of food items

Ensure that cleanliness and hygiene are maintained in the various kitchen areas including refrigerators, storerooms, and food preparation and production stations and that food products are rotated to ensure high standards of freshness

Ensure food is stored in appropriate containers and labelled; minimizing waste and maximizing quality
